Like I expected, my 'weekly' check-ins have turned into monthly ones!
But that's ok! It took a couple weeks to really just on board with meal planning and prepping, but I'm going on week two of being pretty responsible with it all. I let myself look at what I was planning the first two weeks and then adjusting to what was better for me time wise and taste wise. Below are some pictures of some of the things that I have made and loved along with a more accurate list of what I have been eating:
Breakfast: Whole wheat toast with 1/2 an avocado, hot sauce + 1/2c cottage cheese or a greek yogurt
Lunch: Power bowls with 1+c veggies, 1/4c brown rice, 1/4c sweet potato + 2 eggs with salsa
Dinner: Version of lunch power bowl or Sweet potato tacos w/ veggies, sour cream, + a little cheese
[I will be honest, I had slices of a 'Lighter side' pizza from Papa John's this week because it was national pizza day on Thursday. How can you resist!!]
Snack/dessert: Cottage cheese, Greek yogurt, Celery and ranch, soup (for snack); vanilla ice cream + dark chocolate square crushed up (for a really delicious dessert!!!)
I was upset with myself because, although I ate according to my meal plan, I went out one night last week and overdid it a little with the beer (so many extra empty calories!) and I had a few cigarettes- I'm on day 8 of no smokes with the exception of that night though, so I'm not going to let a slip up discourage me. I should have used that night as my "cheat meal" but I had made plans with the girls to go get sushi, so I indulged at Blue Sushi last night and I'm not ashamed... it was so worth it.
This next week I am going to focus on incorporating more protein into my meal plans and less sodium intake. There is sodium hiding everywhere and I know that decreasing that will help the bloat leave my belly- especially when it's that time of the month.
All in all, I am pretty proud of my progress. I have been doing at home workouts a few times as well as doing some sort of yoga or stretching as well. I need to aim for at least 30 minutes, 3-5 times a week, but it has been tough getting time to do that- but that's why they are goals right? Fingers crossed that I keep this up and get more structured every week!
